Cajun restaurant to open on Fifth Street downtown

Louisiana natives starting take-out spot.

---- — Downtown Logansport’s newest restaurant will have a Cajun spice to it.

Cajun DeLight, a cash-only take-out restaurant on Fifth Street next to LoganNet, is opening Tuesday, according to its owner.

Evelyn Dickson, who with her husband, Kenneth, is launching the restaurant, said they’ve drawn on their Louisiana heritage for the Cajun recipes and intend to cater to the downtown lunch crowd.

Evelyn Dickson lived 57 years in Franklin in southern Louisiana, and her husband hails from the northern part of the state. The couple moved to Logansport three years ago to help care for Kenneth Dickson’s aging parents.

”We have not found any Cajun food in the three years we’ve been here,” said Evelyn Dickson, who formerly cooked for Camelot Care Center as well as other Logansport establishments.

The couple is renting a small space from LoganNet’s owners. They plan to have limited seating inside for groups, including a large table Evelyn Dickson compared to the long dining table that large family gatherings would center on back home.

Tuesday’s opening depends on a final health inspection today, Dickson said. The restaurant will start out by serving variations on traditional Cajun food, like gumbo and jambalaya. After the first few months, Evelyn Dickson anticipates adding seafood and other Cajun dishes.

The pair will be the only ones working at the establishment for the time being, she said. Kenneth Dickson will continue driving for Pasquale Trucking until business requires both of them there full time.

”We love it here,” Evelyn Dickson said of Logansport. “The people have been fantastic, so I want to give back to this state.”

Cajun DeLight will be open 10 a.m. to 8 p.m. Monday through Friday after its grand opening Tuesday. The phone number is 574-516-7955.
